Nanuku Resort Fiji  - Kokoda and Bamboo Prawn Cooking Class

If you love seafood, this hour-long food experience at Nanuku Resort Fiji in Pacific Harbour is a must-do.  In this traditional cooking class, you’ll learn how to dehusk a coconut, cut out its succulent flesh and extract it’s rich, creamy milk. Next you’ll learn how to prepare kokoda – a lime-cured, coconut milk infused Fijian ceviche. Then, swap out the fish for prawns, and stuff your bamboo sticks with the same ingredients before cooking them over an open fire. The best part? You get to feast on the fruits of your labour afterwards!

Kanu Restaurant - Chef's Table

Embark on a Culinary Journey with Chef Lance Seeto

Gather a group of 10 friends and join Chef Lance Seeto on a culinary exploration of Fijian cuisine. Drawing from his deep interest and study of Fiji’s history, you’ll discover the captivating connection between food, history and cultureand how we view the world. This 2-hr immersive dining experience is part storytelling, part cooking demonstration and part lunch/dinner. Woven into the storytelling is a world-class, 5-course degustation that pays homage to our food resources and the main cultural food influences - Pacific Island, Indian, Chinese and modern Australian.   Pair with hand-crafted cocktails, wine and liquor for the full experience. And at the end of the journey there is kava - the quintessential and calming beverage once only enjoyed during tribal rituals to exchange knowledge and stories. The Chef’s Table experience is available from Tuesday-Sunday at Kanu’s Nadi and Suva restaurants if you book ahead.
